🏴󠁧󠁢󠁳󠁣󠁴󠁿 BUTTER BEAN SOUP 🏴󠁧󠁢󠁳󠁣󠁴󠁿 Butter Beans are one of my favourites. A brilliant carb, high in protein and low in fat, they can form the basis of so many meals and are perfect for this tasty soup. This recipe makes quite a lot, but it does freeze well - half the quantities if you like! Serves 8 For soup: 700g dried butter beans (soak overnight) 4 sliced onions (approx 500g) 200g celery finely sliced 1 bay leaf 2 sprigs of rosemary 3 cloves garlic For the stock - approx 2 litres
